What is TDS, and why do baristas care so much?

TDS (total dissolved solids) measures how much mineral and impurity the water carries. Too pure (TDS too low) and the extraction turns thin, sour and flat; too mineral-heavy (TDS too high) and the cup goes muddy and bitter, burying the coffee's own character.

The trade (the SCA among others) generally recommends brewing water hold a moderate TDS range. The goal is not zero TDS but steadiness in the right band — a good filtration system tunes tap water into the extraction range, rather than blindly demineralising.

Residual chlorine — the tap-water note in the cup

Hong Kong disinfects its mains water with chlorine, as it should. But residual chlorine carries an unmistakable bleach-and-swimming-pool note, and brewed into coffee it flattens the aroma and finish, collapsing a complex floral-fruit profile into something dull.

Activated carbon cartridges exist precisely to remove residual chlorine. With it gone, the aroma opens immediately and the cup cleans up — the difference blind tasters notice first.

Limescale — the slow killer of espresso machines

Water in some Hong Kong districts runs hard, high in calcium and magnesium. Day by day, scale builds in the boiler, lines and group head. The consequences:

  • Heating efficiency falls and brew temperature wanders, striking directly at extraction consistency;
  • Heavy scaling blocks the lines, and repair costs climb;
  • The machine's life shortens — sometimes to early replacement.

Frequently asked questions

Is lower TDS always better for coffee water?

No. Too low (water too pure) leaves coffee thin, sour and short on depth. The point is moderation and stability, not chasing zero TDS.

Can you really taste the difference with filtration?
